Cookout at Star Gazer Mesa – Your group will be transported in style to the Star Gazer Mesa. Our Chef and his staff will offer a Cowboy Dinner with open-fired Texas T-Bone Steaks, Roast Potatoes and all of the Fixins’, ending with a Dutch Oven Backed Bread Pudding or Fresh Fruit Cobbler covered in a Bourbon Praline Sauce. Our Cowboy Troubadour and Campfire Storyteller will entertain your guests while they enjoy after-dinner drinks and cigars under a star-filled sky.

Cowboy Action Shooting – Learn to shoot the guns that won the west: a single action six-shooter, lever-action rifle, and double-barrel shotgun. Finish with a competition.

Breakfast Horseback Ride – After a one-hour sunrise horseback ride through the canyons and peaks, your guests will work up an appetite. At Stargazer Mesa, they'll get a true Cowboy Breakfast of Biscuits & Red-Eye Gravy, Eggs to Order, Sausage, Bacon, Juice and a steamin’ Cup o’ Coffee. This is the real way to start a day! Cattle Drive – Head 'em up and move 'em out as we keep them doggies rollin' on a three-hour cattle drive through the desert.

Rafting or Canoeing down the Rio Grande River – Novices and experts alike will enjoy the opportunity of “shooting” the Rio Grande River. Floating down the river, you’ll be surrounded by spectacular canyons, flora, and fauna. Your guests will have experienced guides helping them “shoot” the rapids or helping spot the 450 different species of birds that are indigenous to the area. This three-hour trip includes a refreshment break and drops you off right back at Lajitas. An afternoon tour can also be finished with a wine tasting or cookout on the banks of the Rio Grande River.
